Custom Processing
We can custom process beef, pork, lamb, goat, and more to your specifications. Tell us how you want it trimmed, portioned, cured, aged, smoked, or prepared, and we’ll make it happen. We’re equipped to handle whole animals or primals of any size.

Curing & Aging
Our dry aging cooler and curing rooms allow us to expertly age beef and cure meats like coppa, prosciutto, salami, and more for superior flavor. We age beef cuts up to 75 days and cure meats from 2 weeks up to 18 months.

Smoking
Our custom-designed smokehouse uses real hardwoods like hickory, oak, and fruit woods to naturally smoke bacon, ham, sausages, and anything your heart desires. We cold smoke at lower temperatures for delicate fish and nuts or hot smoke meats at ideal temps to intensify flavors.

Sausage Making
From fresh sausages to cured salamis, we craft sausages with exceptional care and ingredient quality. We offer custom blends, recipes, casings, and smoking.

Bacon & Pork Curing
Our flagship bacon put us on the map! We still make our exceptional dry cured, hickory smoked bacon in small batches along with other pork delicacies like prosciutto, salami, and custom charcuterie.

Product Development
